Easy Supper
We've a new recipe around the house.
Now that it's summer time and my standby taco soup and vegetable soup is out.
We're now using the oven for this yummy chicken recipe.
It's incredibly easy.

Chicken Bake
Chicken tenders (can be frozen)
Quartered red potatoes (as many as you'd like)
Sprinkle lightly with Italian dressing and heavily with Parmesan cheese

Bake uncovered for one hour at about 350.
This forms a crusty yummy layer on the potatoes.
And the chicken tenders cook a little quicker than the big breast do.
Feel free to cut breasts into tenders if you'd like.

Try it! It's great!

Yummy Crockpot Chicken
Here's a great recipe from a friend of mine. We had it tonight and it was great!!
3-5 boneless chicken breasts (depending upon size of your family)
1 jar salsa (large or small depending upon size of your family)
1 can diced tomatos
1 -2 cans yellow corn (we love corn so we use 2)
1 can black beans (or 2 if you love black beans)

Cook on low all day. You can put chicken in frozen (I did). When done pull chicken apart so it's shredded. Put back into crockpot to keep warm.

Boil rice and serve over rice OR serve in a tortilla! Add cheese and sour cream.

You can add Rotel if you like things a little spicier (instead of the diced tomatoes).
It's really hard to mess up!!!

Chicken Puffs - Simple and Easy
Chicken Puffs

1 can chicken (easy) or 2 chopped chicken breasts (more work)
1 softened block of cream cheese
salt/pepper
dash of garlic
minced garlic (or chopped green onion - about 1/4 cup)
can also add bread crumbs - about 1/2 cup
1-2 cans of crescent rolls

Mix all the ingredients except rolls
Open can of rolls and instead of separating them as you do for rolls, pinch the seam together to make a rectangle. Add a spoonful of mixture. Fold corners over. Bake at 350 for about 20-25 minutes. Very yummy.

You can spruce these up for adults or keep them simple for kids.
Adult ideas: add cayenne pepper

Serve with a Salad and you have dinner!!
Mixture can be made ahead of time.

Homemade Meatballs + Spaghetti
Last night I made homemade meatballs for our spaghetti for the first time. They were really good and so I wanted to share this recipe with you.
This is one really easy and fun for little ones to do too...
Just make sure they wash up well!

1.5 pounds hamburger
2 tblsp. Parmesan cheese
1 tsp. salt
1/8 tsp pepper
2 eggs
dash of garlic
(anything else you'd like season with)

Combine all of the above ingredients in a large bowl with your hands. It's fun to mix and mash because it gets pretty slimy.

After you've mixed the ingredients make into balls. I did small ones because I'm feeding my 4 little ones.

Then you can cook them one of three ways.
1. Put them in a small pot of spaghetti sauce and cook them until they are done. I had to do them in thirds because they wouldn't all fit into the pot and I didn't want to use the spaghetti sauce I was cooking in. It accumulates quite a bit of grease but this is an easy way to cook the meatballs. When they were done I scooped them out with a slotted spoon and put in the next batch. They take about 10-15 minutes. When I had cooked them all I put them in a little larger pot and added fresh sauce and my already cooked noodles. YUM YUM!

If you use method 2 or 3 you may want to put them in the sauce of your choice for a little longer, maybe on the stove for a bit so they soak up some of the spaghetti sauce. Your choice to do this or not........

2. Brown slowly in frying pan then drain on a paper towel and add to cooked noodles and sauce of your choice.

3. You can also try using a Pampered Chef dish and baking them in the oven. Drain the grease and add to the already cooked sauce and noodles. You can use a regular baking dish too but I find the Pampered Chef dishes work best.

Easy Chicken Parmesan

Chicken and Spaghetti Parmesan

Serves 4-6

1 lb spaghetti, or other pasta, cooked to desired doneness
1 - 24 ounce jar of your favorite pasta sauce
4 - 6 breaded chicken patties OR unbreaded, cooked chicken breasts (I do this more often than not)
1 cup grated mozzarella cheese
1/4 cup grated Parmesan cheese

Preheat oven to 350F. Spray a lasagna or other rectangular baking pan with cooking spray.

Toss cooked pasta and 2/3 jar of sauce together and spread evenly into pan.
Sprinkle spaghetti with 1/2 cup of mozzarella.
Top with chicken patties. Pour remaining sauce over all and sprinkle with the rest of the mozzarella and Parmesan cheeses.
Cover with foil and bake for 20-30 minutes until heated through.
Serve each chicken patty with spaghetti underneath.

*Notes:

  • It's important to add sauce to the pasta, plain pasta doesn't bake as well.
  • My kids like this even without the chicken. Baking the pasta with the sauce is somehow very good as-is.
