Here's a great recipe from a friend of mine. We had it tonight and it was great!! 3-5 boneless chicken breasts (depending upon size of your family) 1 jar salsa (large or small depending upon size of your family) 1 can diced tomatos 1 -2 cans yellow corn (we love corn so we use 2) 1 can black beans (or 2 if you love black beans)
Cook on low all day. You can put chicken in frozen (I did). When done pull chicken apart so it's shredded. Put back into crockpot to keep warm.
Boil rice and serve over rice OR serve in a tortilla! Add cheese and sour cream.
You can add Rotel if you like things a little spicier (instead of the diced tomatoes). It's really hard to mess up!!!
